ST. CLAIRSVILLE -- Everybody likes a room with a view, so Undo's West is showcasing its view of the surrounding area as one of the biggest assets of its newly renovated facility.

Nick Sparachane, co-owner of Undo's Family Restaurants along with his brother Herk, said the business is celebrating the 25th anniversary of its St. Clairsville location. On Thursday, it unveiled updates spurred by the COVID-19 pandemic. Sparachane said the restaurant was forced to close for three months during the early stages of the outbreak, and that is when they decided to "start over."

The brothers opted to do a complete overhaul of the facility, including its banquet room. When they were able to reopen for business, they opened the facility in stages so that the work could continue. Sparachane was pleased to say that all the employees stayed on during the shutdown. Now, 16-18 months later, he said, that effort is complete.

The restaurant is now called the View Room, featuring a view of the Ohio Valley Mall and surrounding area from the long bank of windows along its southern wall. That area and the bar have been renovated to provide a more comfortable dining experience in a spacious setting.

The banquet room, which has hosted countless weddings, meetings and dinners over the last two and a half decades, now features a more modern look, complete with tones of gray and violet surrounding the dance floor.

"The Belmont County community has supported us 100 percent through all of this," Sparachane added.

The overhaul went hand-in-hand with a $5 million investment in the hotel that houses the restaurant, the Wingate by Windham. Danny Aderholt, who owns the hotel along with some partners, said the remodeling of that facility was "way more than a facelift." He said the walls in many areas were torn down to the studs, so everything about the hotel is new. He noted that local people own and operate the hotel, making them more invested in the business and the community. He was proud to say that the project earned a national award as the best renovation in the Windham system.

Nicole Sturgeon, director of sales for the hotel, touted the hot breakfast that is served daily, as well as amenities such as microwave and toaster ovens available in some rooms. She also showed off the 10- and 30-seat conference rooms that are on site, along with the indoor pool, hot tub and fitness center.

Many local residents attended the unveiling of the Undo's improvements on Thursday evening. Belmont County Commissioner Jerry Echemann was on hand, enjoying the refreshments that were offered as well as conversation with other attendees.

"I think it's wonderful," Echemann said of the updates. "I have had many happy nights in here -- weddings, first responder dinners -- you take those memories home with you.

"I think this shows confidence," he continued. "Putting money into it, that is a sign of a thriving business and a hopeful outlook, and I'm happy to be a small part of this."

Wendy Anderson, executive director of the St. Clairsville Area Chamber of Commerce, agreed while visiting with others in the banquet room.

"What an awesome event to have to bring the community together," she said.

She pointed out that chamber members and non members were present, as well as business owners, employees, retirees and residents of all parts of the region, including Wheeling.

"It feels like 'post-COVID' to me," she added. "How could you not be happy in a place like this? It needed an update desperately, and they really did a great job."
